Perhaps the biggest trend to hit the bartending scene in recent years is the adventurous palates of consumers and the effort to create new drinks to keep these customers satisfied. Greater openness to ethnic foods also invites new drink creations to complement these “non-standard” meals. This creative mixology trend also involves experimentation with herbs and spices as well as fresh ingredients, such as fresh mint instead of artificial flavoring. Increasing interest in health and fitness, as well, has spurred work toward creating lower calorie drinks.

The movement toward creativity and invention has encouraged many bartenders who learned on the job to attend bartending courses in mixology. It also is more important than ever for aspiring bartenders to attend classes so that they can keep up with their customers. Amateur home bartenders and customers with significant drink knowledge demand bartenders to know all there is to know about the thousands of liquors and drink combinations available. Bartenders are finding it more and more difficult to stay ahead of their customers without the benefit of added training.
